Soups

Soups

The list below is just a short selection from the wide variety of soups

Kharcho
Kharcho is a thick, strong soup, ideal to warm you up in a cold weather. "Kharcho" is traditionally prepared with beef, but there are also variations using lamp or pork or vegetarian versions with tomatoes and rice. "Khachro" is usually thickened with flour and besides meat or vegetables, it often includes walnuts, coriander and even plums. Georgians say that a real "kharcho" must always be hot and spicy.

Chikirtma
Chikirtma is a hearty chicken soup, Georgians are said to use it as a hangover breakfast. Boild parts of chicken meat are served in a soup flavoured with onions, garlic, coriander, fennel, laurel leaves and a shot of vinegar. The soup is thickened by using flour and whisked eggs.

Khashi
Beef shank and tripe are cooked for several hours, then poured over with milk and served with freshly squeezed garlic. Again a dish that is said to serve perfectly as a hangover breakfast.
